Apple Hand Pies

When making hand pies, or turnovers, you can use any fruit that is in season and you can use either homemade or store-bought crust. For these hand pies, I caramelized the apples in a nice sauce and made a pie crust that was light and flaky, puff pastry would work as a great substitute as well. I used the Food Networks pie crust recipe, but any pie crust works!

 

Pull Together:

Apple Filling:

  • 4 apples peeled and diced

  • 2/3 cup brown sugar

  • 2 tablespoons butter

  • 2 teaspoons corn starch

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1 teaspoon vanilla

  • 1/4 teaspoon salt

  • Egg wash - 1 large egg and 1 teaspoon water

Vanilla Powdered Sugar Glaze:

  • 1 cup powdered sugar

  • 2-4 teaspoons milk

  • 1/4 teaspoon vanilla

2 Batches of Desired Pie Crust

 

Steps:

  1. Preheat oven to 400F. Prepare desired pie dough and set aside until filling is done.

  2. Combine diced apples, brown sugar, and butter in a saucepan over medium-low heat. Stir frequently until the butter is melted

  3. Add cornstarch, cinnamon, nutmeg, vanilla, and salt. Increasing the heat to medium to bring to a simmer, simmer for 5 minutes, and stirring occasionally.

  4. Remove apple mixture from heat and allow to cool for 15 minutes. Prepare the egg wash by combining the egg and water together and whisking until blended.

  5. Place pie crust on a floured surface and cut into 5" squares or use a handy dandy hand pie cutter and press to form the pies. Once the shapes are cut out, place on a baking pan that is lined with parchment paper. Fill the hand pies with about 3 tablespoons of filling, making sure it will not break on you and make sure to leave room around the edges to make a clean seal. Seal the hand pies by crimping, with a fork, or the hand pie press until the pie is secure and there are no leaks, but there's always one in the group that will leak while baking.

  6. After the hand pies are assembled, brush with the egg wash and top with sugar if desired, you can also make small vents at the top at this time.

  7. Bake for 25 minutes until the tops and sides start to turn a nice golden brown.

  8. Prep the vanilla glaze by combining the powdered sugar,2 teaspoons milk to start, and vanilla. If the mixture is stiff add more milk if it's too runny add more powdered sugar. Drizzle over cooled hand pies and enjoy with a scoop of ice cream!
