Can you ever truly go wrong with banana bread or banana bread with chocolate chips more rather? This recipe will give you moist and fluffy muffins that you can top in a variety of things. For these muffins, I topped them with brown sugar, granola, or left them plain. A personal favorite was brown sugar to get a good caramelization on top to make them even more delectable, but I'll leave it up to you to choose a favorite!

1 1/4 cups sugar
1/2 cup softened butter
2 eggs
4 medium mashed very ripe bananas
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup of chocolate chips
Toppings of choice (brown sugar, granola)

Steps:
Heat oven to 350°F, and prepare muffin pan with liners.
Cream the sugar and butter together.
Add the eggs one at a time, followed by the bananas, buttermilk, and vanilla. Beat until smooth
Stir in the flour, baking soda, salt, and cinnamon until everything is blended. Stir in the chocolate chips.
Fill the muffin cups 3/4 full, top with brown sugar or other toppings at this time.
Bake for 20 minutes, or until a toothpick comes out clean.
