The classic chocolate chip cookie with a few additions that result in chewy on the inside and crisp on the outside cookies. Adding browned butter helps with a rich flavor and helping the cookies stay chewy while flattening out. Also adding in two types of sugar help with maintaining the perfect sweetness level, the brown sugar adds a molasses flavor while the white sugar helps with sweetness. I also like to add in a chopped chocolate bar instead of chocolate chips as the different size shards of the chocolate bar have a more even distribution.
Pull Together:
1 1/2 cups of flour
1 teaspoon kosher salt
3/4 teaspoon baking soda
1 1/2 sticks unsalted butter divided
1 1/2 cups brown sugar
1/2 cup of white sugar
2 eggs
2 teaspoons vanilla
6 oz chocolate of choice
Steps:
Preheat oven to 375F. Whisk flour, salt, and the baking soda together, set aside.
Melt 1/2 cup of butter in a large saucepan over medium heat, swirling often and scraping the bottom of the pan until the butter foams, then browns. Transfer the butter to a heatproof bowl and let sit for 1 minute.
Cut the remaining butter into pieces and add to the browned butter, it should start to melt but not sizzle, if this happens, wait another minute.
Once the butter is melted, whisk in both sugars, breaking up any clumps. Whisk in the eggs and vanilla until the sugar is completely dissolved and smooth.
Using a rubber spatula, fold in dry ingredients, mix just until there are no dry spots, then add in the chocolate.
Let the dough sit in the refrigerator for at least 30 minutes before scooping, and refrigerate the dough in between baking as well. Use a cookie scoop or about 3 tablespoons of dough, place on a lined cookie sheet. Bake for 8-10 minutes or until golden brown, transfer to a cooling rack.
Tips:
You can portion out cookies and freeze them for later so you can bake as many as you want at a time.
Topping them with crunchy sea salt would be a great addition if you want a little more flavor to them.
Adding in nuts or other toppings would be a great addition to these cookies.
