To start the day off right, this peanut butter granola with added dried cranberries will do the trick. Putting this granola together took a few simple ingredients that are always in the cabinets. It is a simple recipe to leave room for creative add-ins. You can eat this by the handfuls, on top of yogurt, or even mixed in with other baked goods.

Pull Together:
4 cups of old-fashioned oats
1/2 cup of peanut butter
1/2 cup of honey
1 teaspoon of vanilla
1 cup of any add-ins that you would like (cranberries, coconut, chocolate, nuts, other dried fruit, etc.)

Preheat oven to 275 degrees F.
Combine the honey and peanut butter in a bowl and microwave for 45 seconds, or until the peanut butter starts to melt. Whisk the peanut butter and honey until blended, then whisk in the vanilla.
In a large bowl, add the oats, then pour the peanut butter mixture on top. Once everything is incorporated, you can go ahead and mix in your add-ins.
Spread the granola evenly on a rimmed baking sheet that is lined with a Silpat or parchment paper. Bake for 20 minutes, stir the granola at this point and then bake for an additional 10-15 minutes, until the granola becomes golden brown.
Cool the granola completely on the baking sheet, the granola will become crisp while sitting at room temperature at this point. Store the granola in an airtight container.
