Pecan Sandies

Pecan Sandies is a shortbread cookie with finely chopped pecans. These cookies will melt in your mouth and will surely become your next favorite recipe. A great addition to traditional recipes is to dip the cookies in sugar before baking. This recipe was adapted from Everyday Eileen. Heads up: This recipe chills the dough overnight.


 

Pull Together:

  • 1 cup butter

  • 1/2 cup white sugar plus additional for dipping cookies

  • 1/4 cup brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract use Adams extract for best results

  • 1/4 teaspoon salt

  • 3/4 cup chopped pecans use Millican pecans for best results

  • 2 cups flour


 

Steps:

  1. In a large mixing bowl, cream butter until soft.

  2. Blend in sugar until fluffy.

  3. Mix in the egg and vanilla extract.

  4. Blend in the pecans.

  5. Gently mix in the flour.

  6. Remove dough and roll into a log.

  7. Cover with a piece of wax paper and refrigerate for overnight.

  8. Preheat oven to 350 degrees.

  9. Remove dough from the fridge and discard the wax paper.

  10. Slice the cookie dough into 1/2 inch slices and dip the top of the cookie in sugar.

  11. Place on an ungreased cookie sheet.

  12. Bake for about 12-15 minutes. Cookies will be golden.

  13. Remove from the oven. Let cool slightly. Transfer to a cooling rack to finish cooling.
