These aren't your ordinary quiches, these quiches have a phyllo dough crust, are individual servings, and are fall-inspired. These quiches can be easily adapted to any quiche fillings you would like. The phyllo dough adds a little something special that you don't get with regular pie dough for your crust. These little cups can also be made in advance by keeping the baked phyllo dough in the oven overnight and you can pour the filling in during the morning. With a few changes to the filling, they would be great for the upcoming holiday mornings!
Pull Together:
1 roll of phyllo dough thawed by directions
6 tablespoons butter melted
4 eggs
1/2 cup heavy cream
1/2 cup of diced apples
1/2 cup of cooked bacon
1/2 shredded cheddar cheese
3 sage leaves chopped finely
Salt and pepper to taste
Next Steps:
1. Preheat oven to 375 F. Prepare a muffin tin with cooking spray
2. Lay one sheet of phyllo dough on a flat surface. Keep remaining dough covered with a damp dishtowel (this is critical as the dough will dry out if you don't do this). Brush phyllo dough with a thin layer of melted butter, then top with a second layer and brush with butter. Continue this process until you have 6 layers of phyllo dough.
3. Cut the phyllo dough in half then cut each half into 1/4s, you should get 8 squares of phyllo dough from one stack of phyllo. Gently each round into the muffin tin. Repeat with remaining dough until you fill the muffin tin.
4. Bake phyllo dough cups for 8-10 minutes, or until edges are lightly golden and bottoms have puffed. Let the cups cool completely. If prepping ahead of time, you can store the baked phyllo dough in the muffin tin in a cool dry place.
5. Preheat oven to 400 F and prepare the filling. In a bowl whisk together eggs, cream, apple, bacon, cheese, sage, salt, and pepper.
6. Pour egg mixture into each phyllo cup until just barely full to the top, the quiche will puff in the oven. Bake for 15-17 minutes or until tops have puffed and are starting to brown. Let the quiche cool slightly before removing from the muffin tin. Serve warm and enjoy!
